Hornberger Estate

The olives grown at the Hornberger Estate on Whitehall Lane are blended together to produce a mere 15 gallons of great tasting oil each year.  The oil, produced from mission and manzanillo olives, is harvested and pressed by the St. Helena Olive Oil Company.  The oil gives off a light, fruity taste with hints of green herbs and a slight peppery finish.  This would make a great salad oil or a nice finishing oil for mild vegetables like fava beans or spring peas or for a light fish like halibut or mahi.
